Abstract

The tendency of 21st century studies about the table has been to privilege as multi and transdisciplinary approaches. In fact, it is in its holistic sense that we use the term table, a universe that encompasses goods, people and ideas. Reflect today toward the table constitutes a process of careful inquiry into three of the main pillars of the man’s relationship with food, throughout its history: food, health and culture. This book is the subject of Lusophone Tables and is organized in two volumes, containing five parts and a total of 25 chapters. The 13 chapters of the first volume focus on two central themes: food under the therapeutic and symbolic prism. In Part I (Therapeutic Tables: when food is medicine), it is evident that, historically, medical writings preceded the culinary literature. Part II (Sacred Tables: when food is a symbol) is referred to the table as answer and vehicle of dialogue with the transcendent.

Abstract

This book addresses current controversial debates about food quality. What is it that makes people decide that food is of good, or alternatively of dubious, 'quality'? How food is produced, how it is prepared, how it tastes and in what circumstances it is consumed are all dimensions of its quality. Chapters address a number of intriguing questions: how do people make judgements about taste?; how do such judgements come to be shared by groups or people?; what social and organisational processes result in foods being certified as of decent or proper quality?; how has dissatisfaction with the food system been expressed?; what alternatives are thought to be possible? The book shows that there are many different answers to such questions because there are many different attributes of food about which judgements may be made. The complexity and the significance of the evaluations of the foods we eat are analysed from a variety of perspectives, by sociologists, economists, geographers and anthropologists. The first part of the book focuses on theoretical and conceptual issues, the second part considers processes of formal and informal regulation, while the third part examines social and political responses to industrialised food production and mass consumption. Qualities of food will be of interest to researchers and students in all the social science disciplines that are concerned with food, whether marketing, sociology, cultural studies, anthropology, human nutrition or economics.

Abstract

The studies collected in this volume reflect, in general, upon food given its extraordinary cultural and identity value. Abstract

This book focuses on opportunities and challenges in implementing a bioeconomy strategy from a research and education perspective. Abstract

The MYTOX association research platform, MYTOX "Mycotoxins and Toxigenic Moulds" was established in 2007 and consists of more than 50 researchers from 12 research laboratories in the Ghent University Association. MYTOX deals with mycotoxin research in a multi-disciplinary way, based on four main themes: (1) mycotoxins; (2) toxigenic fungi; (3) mycotoxins and animal health; and (4) mycotoxins and human health. In this way, MYTOX tackles the mycotoxin issue along the production chain from the field to the end consumer, within the ‘One Health’ concept.We welcomed over 100 scientists, researchers and representatives from industry, government as well as academia at the 5th edition of the MYTOX International Symposium, held in Ghent on May 11, 2016. The program included oral and poster presentations related to fungal-related disease monitoring and mycotoxin production; mycotoxin analysis in food and feed, as well as in animal and human biological samples; prevention on the field; management strategies during food and feed storage and processing.
