Abstract

In the years between the two world wars of the twentieth century leaders in Western countries worried about a food surplus. The hardships of the Great Depression were intensified by a glut of wheat and consequent low prices on the world market. Yet at the same time nutrition scientists protested that significant proportions of populations, even in affluent countries, were unable to afford a diet ‘adequate for health’. Fresh fruits, vegetables, dairy products and meat were out of reach for the poor. This book traces the work of three men who sought to bring together the interests of farmers and the needs of the hungry: scientist and passionate campaigner for better nutrition, John Boyd Orr; Australian politician and international statesman, Stanley Melbourne Bruce; and Economic Adviser to Bruce at the Australian High Commission in London, Frank Lidgett McDougall. Bruce once said ‘McDougall brings me a new idea every morning’. One of those ideas became the genesis of their work, which helped bring about the formation of the Food and Agriculture Organization of the United Nations in 1945. All three undertook significant roles in the formative years of the organisation. The story of this contribution to the international world order is little known. The cooperation, diplomacy and persistence of these men provides inspiration for tackling the alarming prospect of food shortages in the present century.

Every day in Mumbai 5,000 dabbawalas (literally translated as "those who carry boxes") distribute a staggering 200,000 home-cooked lunchboxes to the city’s workers and students. Giving employment and status to thousands of largely illiterate villagers from Mumbai's hinterland, this co-operative has been in operation since the late nineteenth century. It provides one of the most efficient delivery networks in the world: only one lunch in six million goes astray. Feeding the City is an ethnographic study of the fascinating inner workings of Mumbai's dabbawalas. Cultural anthropologist Sara Roncaglia explains how they cater to the various dietary requirements of a diverse and increasingly global city, where the preparation and consumption of food is pervaded with religious and cultural significance. Developing the idea of "gastrosemantics" – a language with which to discuss the broader implications of cooking and eating – Roncaglia's study helps us to rethink our relationship to food at a local and global level. The inadequacy of current crops to meet the food demands of the world’s huge, growing population makes the potential of indigenous North American food plants even more significant. These plants can also generate crops that are more compatible with the ecology of the world, and many also have inherent health benefits. Presenting detailed scholarship, a thoroughly accessible style, and numerous entertaining anecdotes, North American Cornucopia: Top 100 Indigenous Food Plants is a full-color book dedicated to the most important 100 native food plants of North America north of Mexico that have achieved commercial success or have substantial market potential. The introductory chapter reviews the historical development of North American indigenous crops and factors bearing on their future economic success. The rest of the book consists of 100 chapters, each dedicated to a particular crop. The book employs a user-friendly chapter format that presents the material in sections offering in-depth coverage of each plant. The first section of each chapter provides information on the scientific and English names of the plants, followed by a section on the geography and ecology of the wild forms, accompanied by a map showing the North American distribution. A section entitled "Plant Portrait" comprises a basic description of the plant, its history, and its economic and social importance. This is followed by "Culinary Portrait," concerned with food uses and culinary vocabulary. The chapters then provide an analysis of the economic future of each crop, discuss notable and interesting scientific or technological observations and accomplishments, and present extensive references.

Abstract

For decades, NGOs targeting world hunger focused on ensuring that adequate quantities of food were being sent to those in need. In the 1990s, the international food policy community turned its focus to the “hidden hunger” of micronutrient deficiencies, a problem that resulted in two scientific solutions: fortification, the addition of nutrients to processed foods, and biofortification, the modification of crops to produce more nutritious yields. This hidden hunger was presented as a scientific problem to be solved by “experts” and scientifically engineered smart foods rather than through local knowledge, which was deemed unscientific and, hence, irrelevant. In Hidden Hunger, Aya Hirata Kimura explores this recent emphasis on micronutrients and smart foods within the international development community and, in particular, how the voices of women were silenced despite their expertise in food purchasing and preparation.

Abstract

Soybean is the most important oilseed and livestock feed crop in the world. These dual uses are attributed to the crop's high protein content (nearly 40% of seed weight) and oil content (approximately 20%); characteristics that are not rivaled by any other agronomic crop. Abstract

The prediction of China's rise is the subject of this book. The main ideas of this book are derived from Kanshokufuji, a new concept proposed by the chief editor of Prof. Nanseki, pertaining to a sound food system in a sound agro-environment. It implies that food supply and demand are non-separable in terms of location due to the importance of retaining the suitable condition of the environment and biodiversity in the region. This concept is necessary and useful for coping with environmental issues and related food safety issues. From this view point, several integrated surveys in both rural and urban areas of China were conducted by the food risk research group at the Research Institute for East Asia Environments (RIEAE), Kyushu University to reveal the current status of the environment, food, and agriculture in this country. The results of the surveys are introduced in this book, along with implications and recommendations. We hope this book be referential for policy-makers, researchers and industry personnel relating to food, agriculture and environment.

Abstract

Following the Fukushima nuclear accident, a large volume of monitoring data has been collected about the soil, air, dust, and seawater, along with data about an immense number of foods supplied to the market. Little is known, however, about the effect of radioactive fallout on agriculture, information about which is vital. Although more than 80% of the damaged area is related to agriculture, in situ information specifically for agriculture is scarce. This book provides data about the actual movement and accumulation of radioactivity in the ecological system—for example, whether debris deposited on mountains can be a cause of secondary contamination, under what conditions plants accumulate radioactive cesium in their edible parts, and how radioactivity is transferred from hay to milk. Because agriculture is so closely related to nature, many specialists with different areas of expertise must be involved in answering these questions. In the case of rice, researchers in rice cultivation as well as in soil, hydrology, and radioactivity measurement are working together to reveal the paths or accumulation of radioactivity in the field. For this purpose, the Graduate School of Agricultural and Life Sciences of The University of Tokyo has diverse facilities available throughout Japan, including farmlands, forests, and meadowlands. Many academic staff members have formed groups to conduct on-site research, with more than 40 volunteers participating. This book presents the data collected from the only project being systematically carried out across Japan after the Fukushima accident.
