Abstract

Coffee has been grown on Java for the commercial market since the early eighteenth century, when the Dutch East India Company began buying from peasant producers in the Priangan highlands. What began as a commercial transaction, however, soon became a system of compulsory production. This book shows how the Dutch East India Company mobilised land and labour, why they turned to force cultivation, and what effects the brutal system they installed had on the economy and society.

Abstract

The purpose of this Special Issue is to provide a thorough and up-to-date presentation of research investigating the impact of coffee and/or caffeine intake on various health outcomes. Areas of interest include, but are not limited to, the following topics: Human clinical trials of coffee or caffeine use in relation to disease or intermediate phenotypes. Epidemiological studies of habitual coffee or caffeine intake in relation to human health, among the general public, as well as, among special populations (i.e., children, pregnant women, diabetics, cancer patients, hypertensives, etc.). Mechanisms of action of nutrients and other bioactive components of coffee/caffeine. Studies integrating genetic or physiological markers of coffee/caffeine intake to investigations of coffee and health.

Abstract

Coffee is not only a popular drink, but also linked different worlds: The coffee trade linked Hamburg and Bremen to transnational networks between Europe and Latin America.Central America was important for global coffee trade because the region was the first to introduce the "wet" form of treatment. The high quality of these "washed" coffees made them sought-after on the world market. German immigrants shaped the trade links between the Central American coffee-growing regions and the North German port cities: They founded export companies, purchased coffee plantations and participated in the prefinancing of the harvests.Christiane Berth analyses biographies and networks of German coffee actors in Guatemala, Costa Rica and Chiapas. It shows how their trade networks became fragile as a result of economic crises and new foreign policy constellation, how it came under pressure in National Socialism and broke up during the Second World War. Nevertheless, trade relations between nation states, networks in the coffee industry and the biographies of coffee players remained closely interlinked, even in the post-war period.

"The monograph considers influence over time of Fairtrade and Rainforest Alliance in 10 Costa Rican coffee farming communities. In-country perspectives and relevant historic and contemporary literature inform findings.&#xD;Misaligned intentions to outcomes; different sustainability approaches; and variable influence is observed. There is opportunity to: consider when certifications are most useful; develop locally relevant standards; vertically integrate sourcing chains; consider how complementary mechanisms can be used alongside, or to improve certification approach.&#xD;Sustainability of coffee as a cash crop, considering influence on biodiversity, and the possible implication of reduced coffee crop density for consumers, the market and farming landscapes, is considered.&#xD;"&#xD;

Abstract

This Special Issue on “Beverage Sensory Modification” presents a series of articles that feature the broad sense of sensory modification with regards to beverages, either by improving their flavor, taste, and mouthfeel properties, or through prevention of spoilage. The scope goes further than the usual technological measures that modulate sensory properties and includes psychological and cross-modal influences, where the sensory modification occurs in the subject’s brain rather than as a result of modified physical–chemical properties of objects.

Abstract

Beer is a beverage with more than 8000 years of history, and the process of brewing has not changed much over the centuries. However, important technical advances have allowed us to produce beer in a more sophisticated and efficient way. The proliferation of specialty hop varieties has been behind the popularity of craft beers seen in the past few years around the world. Craft brewers interpret historic beer with unique styles. Craft beers are undergoing an unprecedented period of growth, and more than 150 beer styles are currently recognized. This Special Issue, Brewing and Craft Beer, comprises nine different works by researchers from five continents (North America, South America, Europe, Africa, and Oceania). Abstract

The toxicity and fate of pharmaceuticals and other emerging micro-organic contaminants in the natural and built environments have been the focus of much research over the last twenty years. Particular focus has recently centred on the fate of antimicrobial chemicals, including antibiotics and antifungals. The occurrence of such chemicals in the environment is thought to contribute to the selection of resistance in exposed microorganisms.This Special Issue (SI) brings together a broad range of recent advances in the field of emerging micro-organic contaminants, ranging from medicinal contaminants to industrial chemicals in the environment. Notably, these range from chemical extraction and large-scale analysis to adverse effects on non-target aquatic organisms and potential risk to humans via contaminated foodstuffs. Additionally, this Special Issue also presents novel contaminant treatment/degradation methods of both physical and biological nature.

Abstract

The sensory properties of foods are the most important reason people eat the foods they eat. What those properties are and how we best measure those properties are critical to understanding food and eating behavior. Appearance, flavor, texture, and even the sounds of food can impart a desire to eat or cause us to dismiss the food as unappetizing, stale, or even inappropriate from a cultural standpoint. This Special Issue focuses on how sensory properties are measured, the specific sensory properties of various foods, and consumer behavior related to which properties might be most important in certain situations and how consumers use sensory attributes to make decisions about what they will eat. This Special Issue contains both research papers and review articles.

Abstract

Carotenoids are a group of natural pigments, consisting of more than 750 compounds. They are mostly yellow, orange, or red in color, due to the system of conjugated double bonds. This structural element is also responsible for the good antioxidant properties of many carotenoids. Carotenoids have shown numerous biological activities (not only as provitamin A), e.g., preventive properties of fruits and vegetables. As lipophilic compounds, their uptake and storage in the body are dependent on various conditions. In vitro and in vivo data showed stimulating and inhibitory effects of matrix compounds on bioaccessibility and bioavailability of carotenoids.
