Abstract

This e-book provides the insight into occupational health and safety problems, challenges and solutions of the dairy sector. Thirty-two authors have been sharing their results and knowledge reflecting the challenges from small scale farming up to industrial style.The worldwide trend of growing farm sizes and a reduction in numbers is one of the major drivers for the changes in the working environment. Musculoskeletal disorders are among the most prevalent health problems of people working on farms. Nevertheless mechanisation has not reduced the number of complaints, and new problems arise due to the changing working environment.

Abstract

The dairy chain is an integral part of global food supply, with dairy food products a staple component of recommended healthy diets. The dairy food chain from production through to the consumer is complex, with various opportunities for microbial contamination of ingredients or food product, and as such interventions are key to preventing or controlling such contamination. Dairy foods often include a microbial control step in their production such as pasteurization, but in some cases may not, as with raw milk cheeses. Microbial contamination may lead to a deterioration in food quality due to spoilage organisms, or may become a health risk to consumers should the contaminant be a pathogenic microorganism. As such food safety and food production are intrinsically linked. This Research Topic eBook includes submissions on issues relating to the microbiological integrity of the dairy food chain, such as the ecology of pathogenic and spoilage organisms through the dairy farm to fork paradigm, their significance to dairy foods and health, and genomic analysis of these microorganisms.

There is increasing interest around the specific role that particular components within dairy foods, such as fat, protein, and other bioactives, play in health. Dairy fat, although a source of saturated fat, may have neutral or beneficial effects on cardiometabolic and gut health. Further, specific types of fat within dairy fat have been linked with improved metabolic health and immune function, while the amount of milk fat globule membrane enclosing the fat may be important in cardiac and muscular outcomes. Dairy proteins may assist in maintaining skeletal muscle mass, particularly post-exercise. While research into individual dairy components is ongoing, the overall dairy food matrix may offer unique benefits to human health as well. For example, the fermentation process involved in cheese and yoghurt production may enhance the nutritional and functional abilities of these foods. Abstract

Phage biology is one of the most significant and fundamental aspects of biological research and is often used as a platform for model studies relating to more complex biological entities. For this reason, phage biology has enjoyed focused attention and significant advances have been made in the areas of phage genomics, transcriptomics and the development and characterisation of phage-resistance mechanisms. In recent years, considerable research has been performed to increase our understanding of the interactions of these phages with their hosts using genomic, biochemical and structural approaches. Such multidisciplinary approaches are core to developing a full understanding of the processes that govern phage infection, information that may be harnessed to develop anti-phage strategies that may be applied in food fermentations or applied in a positive sense in phage therapy applications. The co-evolutionary processes of these phages and their hosts have also been a considerable focus of research in recent years. Such data has promoted a deeper understanding of the means by which these phages attach to and infect their hosts and permitted the development of effective anti-phage strategies. Furthermore, the presence and activity of host-encoded phage-resistance systems that operate at various stages of the phage cycle and the potential for the application of such systems consolidates the value of research in this area. Conversely, phages and their components have been applied as therapeutic agents against a number of pathogens including, among others, Clostridium difficile, Lactococcus garviae, Mycobacterium spp., Listeria spp. and the possibilities and limitations of these systems will be explored in this topic. Additionally, phage therapeutic approaches have been applied to the prevention of development of food spoilage organisms in the brewing and beverage sectors and exhonorate the positive applications of phages in the industrial setting. This research topic is aimed to address the most current issues as well as the most recent advances in the research of phages infecting Gram-positive bacteria covering areas such as phages in food fermentations, their impact in industry, phage ecology, genomics, evolution, structural analysis, phage-host interactions and the application of phages and components thereof as therapeutic agents against human and animal pathogens.

Abstract

De 1974 à 2014, l’Afrique intertropicale a connu une croissance inédite des effectifs des herbivores domestiques. Les effectifs bovins ont été multipliés par plus de 2, ceux des petits ruminants par plus de 3. Aujourd’hui, la région regroupe environ 20 % des bovins et des ovins, 33 % des caprins et 81 % des dromadaires élevés sur la planète. Soit un cheptel de près de 900 millions de têtes. L’ouvrage est axé sur la dynamique des élevages des ruminants et des équidés en Afrique intertropicale. Il décrit les différents systèmes d’élevage rencontrés en zones aride et subhumide et les ressources alimentaires disponibles ; il aborde les impacts locaux et globaux des élevages des herbivores sur l’environnement. Le rôle socio-économique majeur des activités autour des animaux et de leurs produits, et la demande croissante en viande et lait des consommateurs sont soulignés. Une organisation efficace des filières bétail-viande est rapportée, alors que des contraintes à la mise en place d’une industrie laitière persistent. Pour de nombreuses familles vivant proches du seuil de pauvreté, l’élevage est un facteur de réduction de la vulnérabilité. Divers services qui permettraient un développement durable des élevages sont décrits. Cependant, les modes de financements et les suivis des impacts socio-économiques et environnementaux devront évoluer.

Abstract

Comfort during resting, half-closed eyes when feeding on highly palatable feed, or vigorous tail wagging when being brushed are some of the positive indicators that can be used to evaluate the quality of the environment in which domestic animals live. This has been a radical shift from the past as, until now, the welfare assessment on farms has meant assessing negative indicators, namely the number of lame animals, presence of lesions, or frequency of agonistic behaviours. However, the latest research confirms that the absence of a problem or of suffering does not necessarily imply that the animals are experiencing a good life and that their level of welfare is high. To guarantee high welfare standards, animals should experience positive conditions that allow them to live a “life worth living”, and positive indicators are needed to identify these conditions. This Special Issue focuses on the development and validation of indicators of positive welfare or on the refinement of the existing ones, as well as on the identification of suitable living conditions for providing positive welfare to farmed and companion animals.

Abstract

This book presents cross-discipline studies covering aspects ranging from animal science to social/consumer sciences and psychology, with the aim to collect and disseminate information promoting the continuous enhancement of animal welfare by improving stakeholders’ perception of animal welfare. Although animal welfare is about how the animals perceive the surrounding environment, the actual welfare of the animals is dependent on how the stakeholders perceive and weigh animal welfare. The stakeholders can, either directly (i.e., through stock-people interaction with the animals) or indirectly (e.g., when retailers and consumers are willing to pay more for high welfare animal-based products), affect the way animals are kept and handled.

Abstract

Growing evidence shows that a dietary pattern inspired by Mediterranean dietprinciples is associated with numerous health benefits. A Mediterranean-typediet has been demonstrated to exert a preventive effect toward cardiovasculardiseases, in both Mediterranean and non-Mediterranean populations. Part ofthese properties may depend on a positive action toward healthier metabolism,decreasing the risk of diabetes and metabolic-syndrome-related conditions.Some studies also suggested a potential role in preventing certain cancers. Finally,newer research has showed that a higher adherence to the Mediterranean diet isassociated with a lower risk of cognitive decline, depression, and other mentaldisorders. Abstract

Dietary trace minerals are pivotal and hold a key role in numerous metabolic processes. Trace mineral deficiencies (except for iodine, iron, and zinc) do not often develop spontaneously in adults on ordinary diets; infants are more vulnerable because their growth is rapid and their intake varies. Trace mineral imbalances can result from hereditary disorders (e.g., hemochromatosis, Wilson disease), kidney dialysis, parenteral nutrition, restrictive diets prescribed for people with inborn errors of metabolism, or various popular diet plans. The Special Issue “Dietary Trace Minerals” comprised 13 peer-reviewed papers on the most recent evidence regarding the dietary intake of trace minerals, as well as their effect on the prevention and treatment of non-communicable diseases. Original contributions and literature reviews further demonstrated the crucial and central part that dietary trace minerals play in human health and development. This editorial provides a brief and concise overview of the content of the Dietary Trace Minerals Special Issue.
