Abstract

We are pleased to present this book, which is a reprint of articles from the Special Issue entitled “Extraction Strategies to Recover Bioactive Compounds, Incorporation into Food, and Health Benefits” published online in the open access journal Foods (ISSN 2304-8158) from 2019 to 2020 (available at: https://www.mdpi.com/journal/foods/special_issues/extraction). Firstly, this book gathers studies addressing several strategies applied to obtain bioactive products and extracts, not only from food matrices but also from agri-food byproducts, which can serve as new natural additives, nutraceuticals, and functional ingredients for pharmaceutical, cosmetics, and food industries. In particular, free and bound phenolic compounds are explored in buckwheat, sesame, and olive leafy byproducts. Overall, these studies outline new valorization methods and offer new opportunities for alternative practices in the agro-industrial sector that help to migrate toward a circular bioeconomy model. This book also presents studies that predict bioactive components in fruits through mathematical tools and support the formulation of a novel beverage rich in resveratrol, a phenolic compound whose bioactivity is well recognized.

Abstract

Food fermentation is one of the most ancient processes of food production that has historically been used to extend food shelf life and to enhance its organoleptic properties. However, several studies have demonstrated that fermentation is also able to increase the nutritional value and/or digestibility of food. Firstly, microorganisms are able to produce huge amounts of secondary metabolites with excellent health benefits and preservative properties (i.e., antimicrobial activity). Secondarily, fermented foods contain living organisms that contribute to the modulation of the host physiological balance, which constitutes an opportunity to enrich the diet with new bioactive molecules. Indeed, some microorganisms can increase the levels of numerous bioactive compounds (e.g., vitamins, antioxidant compounds, peptides, etc.). Moreover, recent advances in fermentation have focused on food by-products; in fact, they are a source of potentially bioactive compounds that, after fermentation, could be used as ingredients for nutraceuticals and functional food formulations. Because of that, understanding the benefits of food fermentation is a growing field of research in nutrition and food science. This book aims to present the current knowledge and research trends concerning the use of fermentation technologies as sustainable and GRAS processes for food and nutraceutical production.

Abstract

Throughout most of history, medicinal plants and their active metabolites have represented a valuable source of compounds used to prevent and to cure several diseases. Interest in natural compounds is still high as they represent a source of novel biologically/pharmacologically active compounds. Due to their high structural diversity and complexity, they are interesting structural scaffolds that can offer promising candidates for the study of new drugs, functional foods, and food additives.Plant extracts are a highly complex mixture of compounds and qualitative and quantitative analyses are necessary to ensure their quality. Furthermore, greener methods of extraction and analysis are needed today.This book is based on articles submitted for publication in the Special Issue entitled “Qualitative and Quantitative Analysis of Bioactive Natural Products” that collected original research and reviews on these topics.

Abstract

The high demand and depletion of petroleum reserves and the associated impact on the environment, together with volatility in the energy market price over the past three decades, have led to tremendous efforts in bio-based research activities, especially in biofuels and biochemicals. Most people associate petroleum with gasoline, however, approximately 6000 petroleum-derived products are available on the market today. Ironically, these petroleum-derived products have not elicited a high level of interest among the populace and media due, in part, to little awareness of the origins of these important products. Given the finite nature of petroleum, it is critical to devote substantial amounts of energy and resources on the development of renewable chemicals, as is currently done for fuels. Theoretically, the bioproduction of gasoline-like fuels and the 6000 petroleum-derived products are within the realm of possibility since our aquatic and terrestrial ecosystems contain abundant and diverse microorganisms capable of catalyzing unlimited numbers of reactions. Moreover, the fields of synthetic biology and metabolic engineering have evolved to the point that a wide range of microorganisms can be enticed or manipulated to catalyze foreign, or improve indigenous, biosynthetic reactions. To increase the concentration of products of interest and to ensure consistent productivity and yield, compatible fermentation processes must be used. Greater agricultural and chemical production during the past three decades, due in part to population increase and industrialization, has generated increasing levels of waste, which must be treated prior to discharge into waterways or wastewater treatment plants. Thus, in addition to the need to understand the physiology and metabolism of microbial catalysts of biotechnological significance, development of cost-effective fermentation strategies to produce biofuels and chemicals of interests while generating minimal waste, or better yet, converting waste into value-added products, is crucial. In this Special Issue, we invite authors to submit original research and review articles that increase our understanding of fermentation technology vis-à-vis production of liquid biofuels and biochemicals, and fermentation strategies that alleviate product toxicity to the fermenting microorganism while enhancing productivity. Further, original research articles and reviews focused on anaerobic digestion, production of gaseous biofuels, fermentation optimization using modelling and simulations, metabolic engineering, or development of tailor-made fermentation processes are welcome.

Abstract

Recent disasters caused by the spread of fire in buildings and in transportations remind us of the importance of fire protection. Using flame-retardant materials is one important element of the firefighting strategy, which aims to prevent fire development and propagation. These materials are used in different applications, such as in textiles, coatings, foams, furniture, and cables. The development of more efficient and environmentally friendly flame-retardant additives is an active multidisciplinary approach that has attracted a great deal of interest. Studies have aimed at the development of new, sustainable, and flame-retardant additives/materials, providing high performance and low toxicity. Also studied were their properties during ageing and recycling, as well as modeling physical and chemical processes occuring before ignition and during their combustion. The development of sustainable flame retardants and understanding their modes of action provide a strong link between these topics and cover many fields from organic chemistry, materials engineering, and toxicology, to physics and mathematics.

Abstract

Natural products hold a prominent position in the current discovery and development of drugs and have diverse indications for both human and animal health. Plants, in particular, play a leading role as a source of specialized metabolites with medical effects. Other organisms, such as marine and terrestrial animals and microorganisms, produce very important drug candidate molecules. Specialized metabolites from these varied natural sources can be used directly as bioactive compounds or drug precursors. In addition, due to their broad chemical diversity, they can act as drug prototypes and/or be used as pharmacological tools for different targets. Some examples of natural metabolites that have been developed into useful medical drug are cardiotonic digoxin from Digitalis sp., antimalarial artemisinin from Artemisia annua, anti-cancer taxol from Taxus sp., or podophyllotoxin from Podophyllum peltatum, which served as a synthetic model for the anti-cancer etoposide. The study of natural products is still attracting great scientific attention and their current importance, as a valuable lead for drug discovery, is undebatable. I cordially invite authors to contribute original articles, as well as survey articles, that give the readers of Molecules **MOLECULES NEEDS TO BE ITALICIZED** updated and new perspectives on natural products in drug discovery, including but not limited to natural sources, identification and separation of bioactive phytochemicals, standardization, new biological targets, pre-clinical and clinical trials, pharmacological effects/side effects, and bioassays.
