Abstract

In an increasingly interconnected world wine market, evolving consumer demands, technologies, and climate have all contributed to large shifts in global patterns of production and consumption of wine. These shifting patterns of wine production and consumption have entailed changes in the vineyard in terms of total area planted, production practices, and the mix of grape varieties grown. Abstract

Until very recently, most grape-based wine was consumed close to where it was produced, and mostly that was in Europe. Barely one-tenth of the world’s wine production was exported prior to the 1970s, even counting intra-European trade. The latest wave of globalization has changed that forever. Now more than one-third of all wine consumed globally is produced in another country, and Europe’s dominance of global wine trade has been greatly diminished by the surge of exports from ‘New World’ producers. New consumers also have come onto the scene as incomes have grown, eating habits have changed and tastes have broadened. Asia in particular is emerging as a new and rapidly growing wine market – and in China that is stimulating the development of local, modern production capability that, in volume terms, already rivals that of Argentina, Australia and South Africa. This latest edition of global wine statistics therefore not only updates data to 2009 and revises past data, but also expands on earlier editions in a number of ways. For example, we now separately identify an extra eight Asian countries or customs areas (Hong Kong, India, Korea, Malaysia, Philippines, Singapore, Taiwan and Thailand) in addition to China and Japan. We also include more than 50 new tables to cover such items as excise and import taxes, per capita expenditure on wine, the share of domestic sales in off-trade, the shares of the largest firms in national markets and globally, and the most powerful wine brands globally. Given the growing interest in the health aspects of alcohol consumption, we now express it per adult as well as per capita. Perhaps the most significant addition to this latest version is a new section that provides estimates of the volume, value and hence unit value of wine production, consumption, exports and imports for four catagories: sparkling wines, and non-premium, commercial-premium and super-premium still wines.

Abstract

Until recently, most grape-based wine was consumed close to where it was produced, and mostly that was in Europe. Now more than two-fifths of all wine consumed globally is produced in another country, including in the Southern Hemisphere, the USA and Asia. This latest edition of global wine statistics not only updates data to 2016 but also adds another century of data. The motivation to assemble those historical data was to enable comparisons between the current and the previous globalization waves. This unique database reveals that, even though Europe’s vineyards were devastated by vine diseases and the pest phylloxera from the 1860s, most ‘New World’ countries remained net importers of wine until late in the nineteenth century. Some of the world’s leading wine economists and historians have contributed to and drawn on this database to examine the development of national wine market developments before, during and in between the two waves of globalization. Their initial analyses cover all key wine-producing and -consuming countries using a common methodology to explain long-term trends and cycles in national wine production, consumption, and trade.

Abstract

This report analyzes the composition and trends of wine sales in the Italian large-scale retail trade in the period 2009-2017. The analysis focuses on wine sales by type of product, i.e. sales format, color, still/sparkling wine, geographical indication, sales in promotion. Specific insights regard wines in 0.75 liter glass bottles, Private Label wine and the first twenty designations of origin in terms of value sold in the large-scale distribution. Lastly, forecasting models based on quarterly time series have been developed to provide a picture of the future performance of the sector. The study allows defining appropriate strategies to be implemented to respond to new consumption trends.

Abstract

While there is a tremendous literature on the topic of wine and health ranging back to the days of Hippocrates, it is considered that there is an unlimited variety of wine, allowing for the association of senses, nutrition, and hedonism. The history of vine and wine has lasted for at least 7000 years. Vitis represent adaptable plants, and thanks to the large variety of strains, wine is an alchemical mix with unique properties, a rich and original composition in terms of polyphenols, and well known antioxidants. This explains why wine and health are closely linked to nutrition.

Abstract

Wine traceability is a central theme in the current world market where consumers are increasingly demanding the quality and origin of food and drink. The wine production chain and wine composition are generally controlled by different laws (International Organization of Vine and Wine (OIV), European Union (EU), and national governments) and need specific documentation. Nevertheless, wine production is subject to fraud. Consequently, the improvement of the methods applied to verify the origin and quality of wines is very important to protect wine consumers and producers. In this book, eight different papers—six research papers and two reviews—address the topic from different points of view.

Abstract

During spontaneous food/beverage fermentations, the microbiota associated with the raw material has a considerable importance: this microbial consortium evolves in reason of the nutrient content and of the physical, chemical, and biological determinants present in the food matrix, shaping fermentation dynamics with significant impacts on the ‘qualities’ of final productions. The selection from the indigenous micro-biodiversity of ‘virtuous’ ecotypes that coupled pro-technological and biotechnological aptitudes provide the basis for the formulation of ‘tailored’ starter cultures. In the fermenting food and beverage arena, the wine sector is generally characterized by the generation of a high added value. Together with a pronounced seasonality, this feature strongly contributes to the selection of a large group of starter cultures. In the last years, several studies contributed to describe the complexity of grapevine-associated microbiota using both culture-dependent and culture-independent approaches. The grape-associated microbial communities continuously change during the wine-making process, with different dominances that correspond to the main biotechnological steps that take place in wine. In order to simplify, following a time trend, four major dominances can be mainly considered: non-Saccharomyces, Saccharomyces, lactic acid bacteria (LAB), and spoilage microbes. The first two dominances come in succession during the alcoholic fermentation: the impact of Saccharomyces (that are responsible of key enological step of ethanol production) can be complemented/integrated by the contributions of compatible non-Saccharomyces strains. Lactic acid bacteria constitute the malolactic consortium responsible of malolactic fermentation, a microbial bioconversion often desired in wine (especially in red wine production). Finally, the fourth dominance, the undesired microbiota, represents a panel of microorganisms that, coupling spoilage potential to the resistance to the harsh conditions typical of wine environment, can cause important economic losses. In each of these four dominances a complex microbial biodiversity has been described. The studies on the enological significance of the micro-biodiversity connected with each of the four dominances highlighted the presence of a dichotomy: in each consortia there are species/strains that, in reason of their metabolisms, are able to improve wine ‘qualities’ (resource of interest in starter cultures design), and species/strains that with their metabolism are responsible of depreciation of wine. Articles describing new oenological impacts of yeasts and bacteria belonging to the four main categories above mentioned (non-Saccharomyces, Saccharomycetes, lactic acid bacteria, and spoilage microbes) are welcome. Moreover, in this Research Topic, we encourage mini-review submissions on topics of immediate interest in wine microbiology that link microbial biodiversity with positive/negative effects in wine.

Abstract

Wine is a widely consumed beverage due to its unique and pleasant sensory properties. Wine is composed of more than one thousand chemical compounds (e.g., alcohols, esters, acids, terpenoids, phenolic compounds, flavonoids, anthocyanins, minerals, and vitamins, among others) resulting from several chemical and biochemical processes. Microextraction techniques in tandem with high-resolution analytical instruments have been applied by wine researchers to expand the knowledge of wine’s chemical composition with the purposes of improving wine quality, supporting winemaker decisions related to the winemaking process, and guaranteeing the authenticity of wine. As a result, we proposed “Chemical/Instrumental Approaches to the Evaluation of Wine Chemistry” as a topic for a Special Issue in Molecules. This Special Issue aims to provide an update on state-of-the-art extraction procedures (e.g., solid-phase microextraction (SPME)) and analytical tools (e.g., nuclear magnetic resonance (NMR), inductively coupled plasma mass spectrometry (ICP-MS), ultra-performance liquid chromatography tandem mass spectrometry (UPLC-MS/MS)), emphasizing their use as suitable platforms for the establishment of the chemical composition of wine (volatomic profile, antioxidants, phenolic pattern, and elemental composition, among others). Information related to wine sensorial properties, contaminants, authenticity, and chemometric tools used for data treatment are described in this Issue.

Abstract
